Guilin Rice Noodles
The Guilin Rice Noodle is a famous traditional characteristic snack with a long history, which gained its fame by virtue of the unique flavor. The production of rice noodles is quite dainty. It is necessary to grind top-grade early rice into rice milk; pack up, filter and dry up; make it into starch flour, boil and squeeze into noodles or sheets. Both of them are commonly known as rice noodles, which are featured by pure-white color, tender, soft, smooth and refreshing. Guilin Rice Noodles have various flavors including lettuce rice noodles, beef rice noodles, three-delicacy rice noodles, clear-soup rice noodles, stewed-meat rice noodles, hot and sour rice noodles, horse-meat rice noodles, and carrying-pole rice noodles. These different types of rice noodles are cooked differently and taste distinctively. In the memory of Guilin people, the famous rice noodle restaurants include Laodongjiang, Liuboniang, Ronggui, and Youyixuan. The most famous one is Weixiangguan. Weixiangguan was established in the 1940s. As an old saying goes, "in Weixiangguan, you will always want another after you finish one dish". The cooking technique of Guilin Rice Noodles has been included into the Intangible Cultural Heritage List of the Guangxi Zhuang Autonomous Region in 2010.
